Step 1
Heat the oil in a pan, add eggs and scramble the eggs until cooked and set aside in a bowl.
Step 2
Slice the onion and dice the garlic and sauté in a pan. Dice defrosted Elephant House Chicken sausages and fry until golden brown.
Step 3
Add cooked rice, scrambled eggs, chili flakes, curry leaves, tomato, soy sauce to the pan and mix.
Step 4
Serve on to a dish and garnish with coriander leaves and season with salt and pepper to taste.
